What is the point of putting more than one dye at a time on a piece of armour? I haven't noticed any difference when I try to mix them together.

There is a minor difference, for instance if you mix Red and I think it's blue together you get purple or magenta. There are several different colors. But you have to make sure to put two dyes below each other when dying not dye once and dye again. Colors do not add like that.
